they use NBTedit (or at least it seemed like it) to edit size and nature before transferring ownership to the person

Or in reverse since people want the right nature and moves for there poké, they will let you edit it after you gave it to them, that way you dont have to bother with spawning them in with /pokespawn and then give the user masterballs after you editted it and then he can catch it.
