Hello many have needed some kind of way to trade their own Pokemon in single player in order to get their Pokemon to evolve...
I have found a solution to get around this. (Sort of a solution anyway, but it works!)
Mods Required:
- Pixelmon
- In-Game NBT edit (found here)
---------------------------------------------------------------------------------------------------------
1. Install all of the mods above
2. Run your world in minecraft
3. Press the ESC key to open the menu
4. Click "Open to LAN" and then enable cheats
5. do /pokegive (username) (Evolved Form)
6. Send out your un-evolved Pokemon
7. do /nbtedit while facing your Pokemon
8. write down ALL of the values that are listed (in order to be easier to copy them)
9. send out your new Pokemon
10. edit ALL of the values in the new Pokemon to match the values of the old Pokemon
11. Release your old Pokemon if you want... (optional)

And there you have it folks how to transfer the stat from one Pokemon to another!
Note: you do not have to do steps 3 or 4 if you already have cheats on...
