Is there a Pixelmon launcher for Mac OS or Linux?

There are no Pixelmon launcher versions for Mac OS or Linux. For the time being, no developers who work on the Pixelmon launcher use either Mac OS or Linux, so ported versions are not planned at this time. The normal Minecraft launcher can still be used to play Pixelmon on these operating systems.

How do I list my Pixpack on the Pixelmon launcher's Pixpack list?

You need to use the Pixpack API. You can join the #pixpack-api channel on the Pixelmon Discord to request access and ask for guidance.
